What is the point of going Big Tech free with Jolla, when one allows willingly to be tracket for some spare exchange and discounts?!
No need for answer - it's a rhetorical one.

A platform / OS should give you the freedom to achieve what you want, if we stick to the idea that "it should not allow you to do this or that" it's not different from BigTechs that try to impose their view of the world on you. I use SailfishOS because I have control of the system, not because it forces me to submit to their vision of the world.

Other than that, I think you are mixing things up a lot. I might not be happy with Google having all my data, but I'm perfectly fine with my local market that knows me by name anyway to track how their shop is going and what products he might have to buy to satisfy me as a customer.
